Chocolate Bourbons

This recipe takes several days to prepare so plan accordingly.


  1/4 cup chopped pecans

  approx. 1 cup of bourbon

  2 cups white Confectioner's sugar

  5 Maraschino cherries

  6 Baker's semi-sweet chocolate squares

  6 Baker's unsweetened chocolate squares


Pecans

In a small container with a cover add pecans. Cover with bourbon and store in refrigerator from 3 days to 1 week.

Mix

In a food processor add sugar, pecans and cherries, mix well. If too dry use extra cherry juice. If too moist add more sugar. Transfer to a bowl with a cover and place in freezer overnight.

Chocolate

In a large microwave-safe bowl heat chocolate on high until melted. Since microwave ovens differ try doing this in 15 or 30 second intervals so as not to overcook.

Spoon out about a golf ball size portion of the mix and roll into a ball. Dip into chocolate, covering all sides, and place on a flat plate. Do for the remaining mix. Cover and place in freezer overnight.

Serve candies cold, and store in the refrigerator. Since they contain alcohol be sure to label them as you deem appropriate.
