Swiss Cheese Omelet

About 10 minutes to prepare and cook.


 2 cups Egg Beaters or 2 eggs beaten

 4 slices ham, diced

 1 slice onion, chopped

 1 clove garlic, chopped

 1/4 can black olives, chopped

 1 small green bell pepper, chopped

 4 tablespoons olive oil

 2 slices Swiss cheese, cut into strips or pieces

 1 Tbs black pepper (optional)

 4 slices Jalapeno, chopped (optional)

Set non-stick skillet onto medium high and start chopping ingredients. When skillet is warm, add 2 Tbs oil. Add green pepper and cook for 2 minutes. Add onion, ham, olives, and jalapeno. Cook until onion is clear, about 5 minutes.

Pour above onto a plate. Add 1 Tbs oil to skillet. Add one cup egg/Egg Beaters to skillet and pour very thinly. Add half pepper and half garlic. When egg has cooked a bit add 1 slice Swiss cheese. After egg is firm and can be easily pushed around the skillet add half of the plate ingredients into the center of the egg. Carefully fold one edge over to make an omelet. Remove and place on plate.

Add remaining oil and do the same for the next omelet. Serves two.
