Crab Cakes

About 35 minutes to prepare and cook.


 2 6-oz cans lump crab meat

 1/4 cup onion

 1/4 cup red bell pepper

 1/4 cup celery

 1/4 cup cilantro

 1/4 cup mayonnaise

 1/2 cup bread crumbs

 1 egg

 2 mini loaf pans


In a food processor add onion, red bell pepper, celery, and cilantro. In a large bowl add egg and mix well.

Combine contents of food processor to bowl and add crab, mayonaise, and a quarter cup of bread crumbs.

Mix well. Scoop mixture into mini loaf pans. Sprinkle remaining bread crumbs on top. Add more if desired.

Bake in pre-heated 400 degree oven for 20 minutes. Remove and let cool for a few minutes before serving.
