Lewis Squash Creole

About 1 hour to prepare and cook.


 2 large yellow squash, diced

 4 slices of bacon

 1 cup bread crumbs

 1 clove chopped garlic

 1/2 cup chopped onion

 1 lb hamburger meat, lightly cooked, drain if desired

 1 cup rice

 1 large green bell pepper, chopped

 1 tablespoon olive oil

 Tabasco sauce (optional)


Start the rice cooking in a small pan with a cover. Also start the hamburger meat in a non-stick skillet.

In another non-stick skillet with a cover cook squash with bacon and oil on medium heat until squash is golden brown. Add onion, bell pepper, and garlic. Cook until onion is transparent. Transfer to a 9x13 glass pan and add the cooked hamburger meat. Fold in the rice. Sprinkle bread crumbs on top. Bake at 350 degrees for 20 minutes.

Serve with Tabasco sauce to taste.
