2 Tbs Star Extra-Virgin olive oil 2 Tbs chili powder 1 packet chicken bouillon 1 green bell pepper, chopped 2 slices onion, chopped 1 can diced tomatoes 1 can corn, drained 1 can chicken breast, drained, mash into small pieces 4 cloves garlic, chopped 4 cups water 1 lime, sliced or wedges cilantro 1 large avocado, sliced
Heat oil in 6-quart soup pot over medium heat for 2 minutes. Begin chopping bell pepper and onions. Add onions, peppers, and corn. Stir fry for 5 minutes or until onions are tender. Add chicken and tomatoes and stir fry an additional 5 minutes. Add chili powder, chicken bouillon, and water. Bring to a boil. Reduce heat to low, cover, and cook for at least 15 minutes. Stir in garlic just before serving.
Into individual bowls squeeze lime, add cilantro and avocado to taste.
